Spam Quiche

This is a easy and tasty dish!

1 Deep dish pie shell (9″)
6 Eggs
3/4 cup Whipping cream
1 can SPAM Luncheon Meat, cubed – (12 oz)
1 Medium onion
1 cup Mushrooms (diced)
6 cloves Garlic (minced)
2 cups Sharp Cheddar cheese, – (shredded and divided in to two portions)
1/2 tsp. Cinnamon

Heat oven to 425′F. Bake pie shell 6-8 minutes. Reduce oven temperature to 350′F. Saute onions, garlic and mushrooms with olive oil in a frying pan until the onion is soft and semi-transparent. In bowl, beat together eggs, whipping cream, cinnamon, salt and pepper until creamy. Stir into to the mixture the cubed SPAM and the saute mixture. Sprinkle 1 cup cheese in pieshell. Pour egg mixture over cheese. Sprinkle remaining cheese over egg mixture. Bake 45-55 minutes or until eggs are set.
